Lunch today was Salmon Patties with melted cheese and lettuce. Simple and easy that's my cooking motto.
All you need is a pound of deboned and flaked salmon. Add a cup of bread crumbs. Beat two eggs and mix them into the mixture. Add some tarragon and some salt. Coat a pan with some olive oil spray, warm it up over a medium heat. Make patties out of the salmon mixture. Put it in the pan and fry until golden brown.
