Salad Time

Yes, it’s summer time, and that means nobody wants a heavy meal on a hot day. So that means it’s time to make salads. This one is super easy to make and it’s a no cook type of dish so the kitchen doesn’t get extra summer heat.

To start with you need a big bowl full of mixed green lettuce. Don’t just pick the regular head lettuce, but choose something with a variety of lettuces in it. Now thinly slice 8 radishes. Add ¾ cup of feta cheese. And toss all of these ingredients. Now drizzle 2 Tbsp olive oil over the salad, and the juice of a freshly squeezed lemon. Add salt and pepper to taste. See I told you it was easy.

  3. Yummy! I dare you to add some peas and a little bit of fresh mint to this mix ;) A restaurant near my apartment does a salad like the one you described, plus those other 2 ingredients - and it's soooo good!

  5. Yum! We have three weeks of fresh CSA vegetables because my in-laws are in Alaska and gave us their share. There is nothing quite like fresh lettuce in the summer. This looks awesome.
