West Indian Fish with Tomato, Pepper, and Onion Relish

Here’s a simple fish recipe that uses loads of those fresh summer vegetables. 

What you’ll need.

2 pounds of firm fish fillets
1 cup of ripe chopped tomatoes
1 cup chopped onions
1 cup chopped green peppers
2 cloves garlic, minced
1 teaspoon cayenne pepper
½ cup fresh lime juice
1 tablespoon sugar
Seasoning Salt to taste
2 tablespoons butter
Put your fillets on a steel baking pan that is greased. Combine all the ingredients except the butter. Spread the relish over the fish fillets. Preheat the oven to 350 degrees.

Dot the fish with butter. Bake for about 4 minutes. Then place under the broiler and cook for another 3 minutes, or until brown on top.
