Hobo Portabella Mushroom Melt

Remember those fabulous hobo meals we all made when we went on those camping trips with our family. Here is a twist on that traditional hobo dinner. It’s the hobo portabella mushroom melt.

Here’s what you need

English Muffins
Sliced Swiss Cheese
Sliced Onions
Portabella Mushroom Caps
Aluminum Foil

Here’s What You Do

Split your muffins in half. Then place a slice of cheese on the bottom. Remove the stem from the mushroom cap. Place a slice of onion on top of the mushroom cap. Add another slice of cheese. Put the muffin top on and then wrap in the combo in foil. Bake it in the oven at 425 for around 20 to 25 minutes. When you open the foil you’ll have a yummy mushroom sandwich.

    Yum! Love portabello mushrooms. Not crazy about swiss cheese, but I'm thinking I could go for a slice of gouda instead, and still have a most yummy sandwich. Thanks for sharing this yummy idea.
