Chicken Enchiladas with Green Tomato and Tomatillo Sauce

Tomatillos are a fruit that are much like tomatoes. They are extremely high in potassium and vitamin A, so they are a food that isn’t used that much that should be. Here is a sauce that will add a little different taste to your chicken enchiladas.

Here’s what you need

2 cups of shredded chicken
Corn tortillas
10 tomatillos
3 green tomatoes
Cilantro
2 cloves garlic
1 cup shredded Monterey Jack cheese

Here’s what you do


Preheat oven to 350 degrees. Cut the tomatillos and green tomatoes into quarters. Place them in a skillet, and water. Simmer them for eight or ten minutes. Now place them into a food processor, add the garlic and cilantro. And blend the items. Pour the mixture back into the skillet and cook another 5 minutes. Now take ½ of the shredded cheese, ½ cup of the sauce, and the chicken, mix together. Next warm your tortillas. Then fill them with the chicken mixture. Roll them and place them in a baking dish. Pour another cup of the sauce over it. And sprinkle with the remaining cheese. Now bake it for 15 to 20 minutes. Take out of the oven and garnish with cilantro.
