Red Potato and Green Pea Salad

Okay, potato salad always gets knocked for not being too healthy. But we all love it. So here is a version that is a little healthier, and of course it tastes great.


Here’s What You Need

1 lb. of new red potatoes
½ cup of olive oil
1 celery stick chopped
1 ½ cup of frozen peas
Juice from a fresh squeezed lemon
½ cup chopped parsley
Salt and pepper to taste

Here’s what you need to do


Cut your potatoes into smaller pieces, and boil them until they are soft. Add your lemon juice to your olive oil. Once the potatoes are soft, add the olive oil mixture. Then add the remaining ingredients and stir. It’s pretty easy to make, and it tastes great.

  3. Yes I am a sucker for potato salad. As for adding peas... I cant get enough of them, so i would add them to every recipe...lol.
