Kale and Pear Chicken Salad

Yes, it's a new year and we are all looking for ways to keep that New Year's resolution to eat healthier. So here is a salad that is loaded with extra vitamins, and I know there are plenty of people saying I don't know if I like kale. But remember it's pretty much a super food. It's full of Vitamin K, A and C. It's an anti-inflammatory. And these are just a few of the benefits. So don't turn your nose up to it. Just start pairing with foods you enjoy more.


Here's what you need

1 bowlful of chopped kale
1 handful of sliced purple onion
1 red pair diced
2 handfuls of almonds
2 handfuls of dried cranberries
Top it off with a vinaigrette dressing
