Chicken Rice Noodle Stir Fry

One of the great things about stir fry is it never turns out the same two times in a row. You can be so creative with stir fry, and it's a great way to clean out the fridge. I mean there really are no wrong ingredients when it comes to vegetables and stir fry are there? So here I was craving stir fry, and here is the recipe I came up with for chicken rice noodle stir fry.

Here's What You Need

Chicken (I used half of a rotisserie chicken I had on hand)
1 sliced purple onion
1 sliced red bell pepper
2 cloves minced garlic
1 teaspoon minced ginger
2 cups chopped napa cabbage
2 chopped carrots
1 tablespoon chopped cilantro
2 cups chicken slices
2 cups of noodles
2 cups of rice noodles
1 teaspoon chili peppers
1/2 cup of soy sauce
2 Tablespoons sesame oil

What to Do

Chop up all of your items and set them aside. Cook your rice noodles as directed on the package. Next warm the sesame oil in a stir fry pan. Then add your napa, carrots, onion and bell pepper. Cook for a couple of minutes. Next add your chicken and soy sauce. Make sure your chicken strips are cooked through. Add your garlic ginger, cilantro and chili peppers. And finally toss in your rice noodles. Mix all of the items together thoroughly.

And now you have a great and if you used low sodium soy sauce fairly healthy meal.

Did you know that rice noodles are gluten free, but soy sauce is full of glutens? Now you know.
