Coconut Curry Shrimp

This is a super easy and fairly healthy version of Coconut Curry Shrimp. It's guaranteed to please those shrimp lovers.

Here's What You Need

1 pound of large shrimp
2 cups Panko breading crumbs
1 cup of coconut flakes
2 Tablespoons curry
1 Teaspoon ginger
2 eggs
3 Tablespoons grape seed oil
1/2 cup Dijon mustard

Here's What You Do

Preheat your oven to 400 degrees. Now peel and devein the shrimp. Next mix the egg, curry, ginger, Dijon mustard and the oil in a bowl. Now mix together your coconut flakes and your bread crumbs. Dip each shrimp first in the egg mixture and then into the bread crumb mixture. Now bake the shrimp for 9 minutes. It's that simple!
