Buffalo Chicken and Rice Salad

Everybody loves the great taste of buffalo chicken wings. But they often aren't that healthy. Here's a way that you can get that wonderful taste minus some of that health guilt that can come along with eating it.

Here's What You Need

1 cup cooked brown rice
1 cup chopped celery
2 Tablespoons Olive Oil
1 lb cubed chicken
1/2 cup red hot sauce
1/4 cup water
1 cup salad greens
1/2 cup crumbled blue cheese

Here's What You Do

Warm 1 Tablespoon olive oil in a skillet. Next cook your celery for a couple of minutes in the olive oil. Set that aside. Add the remaining olive oil and the chicken. Brown the chicken and then add the hot sauce and water. Continue cooking until the chicken is cooked thoroughly. Now mix the rice chicken and celery together. Place it on top of the salad greens and sprinkle it with the blue cheese. It's a great and healthy salad.
