Fried Noodle Patties

Are you looking for something different for lunch? Or maybe a cute item to put into a food item to put into a bento box? Fried Noodle Patties are an easy and tasty side dish that can be re packed for lunch.

Here's What You Need

7 oz rice noodles
1 medium carrot grated finely
1 medium zucchini grated finely
1/2 cup chopped fresh cilantro
3 eggs beaten
2 Tablespoons vegetable oil
dipping sauce

Here's What You Do

Place the noodles in a bowl and cover them with boiling water. Let them stand until they are tender. Next combine the noodles, carrots, zucchini, cilantro, and eggs in a bowl. Mix them together. Then heat the oil in a frying pan over medium heat. Now put your mixture into a patty. I decided that I wanted larger patties so I used a heart shaped cookie mold and packed the noodle mixture in it. I fried the noodles in the cookie cutters so they would come out with that cute heart shape. Fry these patties until they are brown. You can now serve them as an appetizer or pack them with a sauce for lunch.
