Spinach Mushroom and Egg Breakfast Skillet

An easy breakfast is always appreciated. And a breakfast where you can raid the ridge and find all the ingredients you need for that important meal is even better. So here's a simple breakfast that will give you a healthy start to your day.

Here's What You Need

1 Tablespoon Olive Oil
1Clove Garlic Minced
1 cup of fresh spinach
1/2 cup of fresh mushrooms sliced
1 sliced jalapeno
1 teaspoon cumin
1/2 cup of black beans
1 fried egg
shredded cheese

Here's What You Do

Heat you oil in a skillet. Throw in your garlic and mushrooms. Cook them over a medium heat for 5 minutes. Add your spinach to the mixture. Cook until the spinach is wilted. Add your cumin and jalapeno. And cook another two to three minutes. Move the mixture to a bowl. Warm your black beans in the skillet. Then layer your beans on top of the spinach mixture. Now fry an egg and add it to the bowl. Next sprinkle with shredded cheese.

Did You Know?

Cumin assists with digestion and can be beneficial in eliminating bloating and gas. So it's a really great combination with those black beans.
