Here's What You Need
2/3 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
2 1/2 tablespoons chopped fresh marjoram
2 pounds skinless boneless chicken breast halves
4 tablespoons olive oil
3 tablespoons white wine vinegar
6 cups mixed greens (I used a mixture of spinach and kale.)
Here's What You Do
In a bowl mix together the first three ingredients. Then whisk the egg in a bowl. Place the chicken in a plastic bag and pound it to flatten it. Then dip the chicken in the egg and then the panko mixture.
Heat 2 tablespoons oil in a skillet over medium high heat. Add the chicken and cook until golden and cooked through. It could be 4 to 5 minutes per side. Remove the chicken. Next add the remaining olive oil and vinegar. Throw in your greens. And heat them until they are wilted. Place the greens on a plate and then place the chicken on top of it.
