Parmesan Chicken With Mixed Greens

During the week you always need easy meals to make. Ones that don't take much time, but they still taste great. This Parmesan chicken can be fixed in a half hour, and it tastes great.

Here's What You Need

2/3 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
2 1/2 tablespoons chopped fresh marjoram
1 egg
2 pounds skinless boneless chicken breast halves
4 tablespoons olive oil
3 tablespoons white wine vinegar
6 cups mixed greens (I used a mixture of spinach and kale.)

Here's What You Do

In a bowl mix together the first three ingredients. Then whisk the egg in a bowl. Place the chicken in a plastic bag and pound it to flatten it. Then dip the chicken in the egg and then the panko mixture.
Heat 2 tablespoons oil in a skillet over medium high heat. Add the chicken and cook until golden and cooked through. It could be 4 to 5 minutes per side. Remove the chicken. Next add the remaining olive oil and vinegar. Throw in your greens. And heat them until they are wilted. Place the greens on a plate and then place the chicken on top of it.
