Here's What You Need
1 small head of red cabbage
2 tbsp. sunflower seed
2 medium carrots
2 tbsp. orange marmalade
2 tbsp. red wine vinegar
4 tbsp. vegetable oil
Here's What You Do
Shred the cabbage finely. Pace it in a bowl. Salt to taste. Using your hands, vigorously knead the cabbage for about 5 minutes or until the cabbage has softened.
Roast the sunflower seeds in a frying pan, stirring constantly until they are golden-brown. Let them cool.
Grate the carrots. Peel the oranges and separate the segments.
Stir the sunflower seeds, carrots, orange segments, marmalade, vinegar and oil into the cabbage. Season the with pepper to taste. Allow it to marinate for at least 15 minutes.
It can be served with poultry or brats. It's perfect for Oktoberfest.
