4 washed oranges
1/2 cup honey
1 Tablespoon cinnamon
3/4 cup water
Here's What You Do
Peel the oranges with a vegetable peeler. Leave behind as much of the pith as possible. Set the oranges themselves aside. You aren't going to need them. Boil two saucepans of water. Place the peels into the first pan, and boil them for one minute. Drain the water from this. Then repeat the process in the second pan. This will help remove some of the bitterness from the peelings.
Next combine the peels honey cinnamon and water and bring them to a boil. Then reduce the heat and simmer for about 25 minutes. Continue to simmer until the skins are covered in a thick syrup. Then pull the orange peels out and place them out to dry on a wire baking rake. Allow them to dry for an hour or so. Then you can eat them or store them in a container.
