Leek Confit

It's always great to have some simple homemade items that you can add to dishes. Leek confit is one of those items that is easy to make and keep on hand. This simple mixture can be added to mashed potatoes to give them a different flavor, or it can be used as a garnish for meat dishes. And the great thing about it is you can freeze it, and use the confit later on.

Here's What You Need

3 Tablespoons butter
3 Tablespoons olive oil
12 cups sliced leeks
1 teaspoon kosher salt

Here's What You Do

Heat your butter and olive oil in a skillet. Stir in your leeks and salt. Stir occasionally until the leeks are wilted. Reduce the heat, cover and simmer for about 35 minutes. Then store it in an airtight container.
