Mac and Cheese with Chicken and Brocolli

Mac and Cheese is a wonderful meal in the winter. It just makes you feel warm all over. It's almost as good as soup. And while there are those who shun homemade mac and cheese for the boxed version. I am one who enjoys the homemade versions.

Here's What You Need

1 lb rotisserie chicken breast
2 heads of broccoli cut into florets
2 tablespoons butter
2 tablespoons flour
2 cups whipping cream
2 cups almond milk
1  cup grated fontina cheese
1 cup grated cheddar cheese
1 pound cooked pasta shells

Here's What You Do

Cut your chicken breast into cubes and set aside. Steam the broccoli for about three minutes and set aside. Next melt the butter in a saucepan. Add the flour and cook for 2 minutes, stirring it constantly. Gradually mix in the cream. Bring it to a boil, reduce the heat and simmer for about 10 minutes stirring it frequently. Then add both the cheeses and stir until the sauce is smooth. Add the pasta, chicken and broccoli mix together. And then you can serve your meal.
