No Bake Strawberry Cheesecake

It's not really strawberry season, but I wanted something involving strawberries. And I was really craving cheesecake. But I didn't want to have to bake. It just can be a hassle. I wanted something that was pretty quick and easy to prepare. I decided on a no bake strawberry cheesecake.

Here's What You Need

Crust
6 whole lowfat honey graham crackers
2 Tablespoons butter
1 Tablespoon honey

Filling
1 box strawberry flavored gelatin
2/3 cup boiling water
16 oz  cottage cheese
16 oz cream cheese
2 Tablespoons honey

Topping
1 pint fresh strawberries
2 Tablespoons honey

Here's What You Do

Coat an pie tin with non stick spray
Mix the cracker crumbs with melted butter and honey until it is evenly moistened. Press firmly over the bottom and up the side of the tin. Place this in the freezer while you are preparing the filling.
Next dissolve gelatin in boiling water. Puree the cottage cheese in a food processor until it is creamy. Add gelatin, cream cheese, and honey and process it until it is smooth. Pour the prepared mixture into the prepared crust. Cover and refrigerate four hours or until set. Next prepare the topping. Wash and dry the berries. Remove all of the stems. Cut the berries into quarters. Then gently toss the berries with the honey. Then you can top your no bake strawberry cheesecake with those fresh strawberries.
