Pecan Salmon With Lentils

With all of the holiday deserts. I decided that I really needed to try something a little bit more healthy. So salmon grabbed my eye at the store. And I threw together pecan salmon with lentils.

Here's What You Need

3/4 cup dried lentils
1 large garlic clove chopped
2 tablespoons red wine vinegar
1/2 tablespoons Dijon mustard
2 tablespoons olive oil
1 cup cherry tomatoes
1/4 cup fresh dill leaves chopped
2 salmon fillets
1/4 cup pecans

Here's What You Do

Add the lentils, garlic to water in a medium saucepan. Bring it to a boil, then reduce the heat and simmer until the lentils are tender. Drain and transfer to a bowl. Stir in the vinegar, mustard and tablespoon of oil. Then add the tomatoes and the dill.

Warm the remaining olive oil to a skillet. Add the salmon to the skillet. And place the pecans on top of the salmon. Cook for about five minutes. Then turn the salmon and cook for about another five minutes. Serve the fillets on top of the warm lentils.
