Healthy Summer Picnic Lentil Salad

Well summer is here, and everyone needs a salad to take to those cookouts they will be attending. You could make the usual or your could make a healthy summer picnic lentil salad. It's simple to make. It has really healthy ingredients. And well it tastes as good as potato salad.

Here's What You Need

1 cup of uncooked red lentils
1/2 chopped red onion
1 Tablespoon olive oil
2 chopped green onions
1 clove minced garlic
1 freshly squeezed lemon
2 chopped carrots
2 Tablespoons red wine vinegar

Here's What You Do

Cook your lentils. And set them aside. Once they have cooled a little add all of the ingredients. Mix them together. And then refrigerate for 30 minutes.

Did you know that lentils are high in iron? So they are great for vegetarians or vegans.
