Lemon Orange Chicken Tagine With Cherries

Tagines are North African stews that are slow cooked. They use all of those wonderful spices that aren't part of the everyday western cooking, but so many of them are so good for you.

Here's What You Need

1 teaspoon turmeric
1 teaspoon allspice
1 teaspoon paprika
1 teaspoon cardamom
1 teaspoon nutmeg
1 teaspoon sea salt
1 teaspoon black pepper
2 lbs of chicken thighs
2 tablespoons olive oil
1 yellow onion chopped
3 cloves minced garlic
1 poblano chile pepper chopped and deseeded
3 tablespoons marmalade
1 tablespoon white balsamic vinegar
2 tablespoons lemon juice
1 navel orange sliced
1 cup pitted cherries

Here's What You Do

Combine the spices in a bowl. Coat the chicken with the spices and set it aside. Next warm you oil and saute the onion, garlic and pepper. After about five minutes add the chicken to the mixture. Cook over a low heat. Mix the marmalade, vinegar and lemon juice together. Add the mixture to the chicken. Next add the orange slices and cherries around the sides of the pan. Cook this for an hour to an hour and a half. Serve it with rice or couscous.
